Directions
Preheat your air fryer to 400°F. While it’s warming up, give the basket a quick spray with some cooking spray to keep things from sticking. In one shallow dish, beat the egg, and in another, mix together the cornmeal, flour, panko, salt, and pepper. Dip each tomato slice into the egg, then press it into the cornmeal mixture, making sure both sides are well coated. Arrange the tomatoes in a single layer in the air fryer basket, then spray the tops lightly with cooking spray. Cook them for about 8 minutes, then flip each slice, spritz any dry spots, and cook for another 4 minutes. Once they’re golden and crispy, transfer them to a plate lined with paper towels to soak up any extra oil. Repeat until you’ve cooked all your tomatoes.
