Heat some oil in a deep fryer or a large pan until it reaches about 375°F (190°C). In a bowl, mix together the gram flour, salt, cayenne pepper, cumin seeds, and baking powder. Slowly add lukewarm water to the dry ingredients, about half a cup at a time, stirring until you get a thick batter that's similar to pancake batter.

Dip each potato slice into the batter, making sure it's fully coated. Carefully drop the coated potatoes into the hot oil in small batches so they cook evenly. Fry them for 2 to 4 minutes, turning once, until they’re golden and crispy. Once cooked, transfer the potatoes to a plate lined with paper towels to soak up any excess oil.
