Step 1
Cut the feta into pieces about half an inch thick, either squares or rectangles—whatever you prefer. Crack a couple of eggs into a bowl wide enough to dip the feta pieces, then whisk them lightly with a fork. Spread some flour out on a plate, and on another plate, pour out the sesame seeds.
Step 2
Take each piece of feta and first coat it in the flour, making sure all sides are covered. Then dip it into the beaten eggs, followed by a good roll in the sesame seeds so they stick well.

Heat a generous amount of olive oil in a frying pan over medium-high heat—enough for shallow frying. Carefully place the coated feta pieces in the pan, working in batches if needed so they don’t crowd. Fry them until golden and crispy, about 5 minutes per side.
Step 4
Once cooked, transfer the feta to a paper towel-lined plate to drain off any extra oil. Just before serving, drizzle a little honey over the top and enjoy while it’s warm.
