Step 1
Heat your air fryer to 350°F (175°C). While it’s warming up, spray a small metal container—about 6 inches wide and 4 inches tall—with cooking spray. This will be your inner pot for the frittata. Add a bit of butter to the container and pop it into the air fryer for about 45 seconds to melt the butter.
Step 2
Once the butter is melted, toss in the chopped bell pepper and onion, and let them cook for a couple of minutes until they start to soften. Take the container out carefully, stir in the cooked sausage crumbles, then sprinkle on the Colby Jack cheese.
Step 3
In a bowl, beat the eggs until the yolks and whites are fully mixed. Season with salt, pepper, and a splash of hot sauce if you like a little kick. Pour the egg mixture over the other ingredients in the container and gently stir to combine everything.

Put the container back into the air fryer basket and cook for about 12 minutes. Check by inserting a toothpick in the center—it should come out clean, and the top should be lightly browned. If it needs more time, keep air frying in 30-second bursts until it’s set. Serve it warm or at room temperature, maybe with some salsa on the side.
