Melt the butter in a pot over medium-low heat. Once it’s melted, toss in the marshmallows and stir until everything is melted and combined, which should take about 5 minutes. Then, add the Fruity Pebbles cereal and mix it all together really well. Press this mixture firmly into a 9-inch pie pan and pop it in the fridge to chill for about 20 minutes.

While the crust is setting, beat the cream cheese in a bowl with an electric mixer until smooth. Gradually add the powdered sugar and keep mixing until it’s creamy. Stir in a cup of the cereal now. In a separate small bowl, combine the hot water with the gelatin and mix until it dissolves completely. Pour the gelatin mixture into the cream cheese bowl and blend everything until it’s nice and smooth.
Step 3
Pour this creamy filling over your chilled crust, then refrigerate the whole cheesecake for at least 2 hours so it can set up properly. Before serving, crush the rest of the cereal and sprinkle it on top for a fun, crunchy finish.
