Better Cooking Tips
- Cook the pasta just until al dente to maintain a pleasant bite.
- Reserve some pasta water to adjust the sauce consistency if needed.
Step 1
In a bowl, mix together the flour, eggs, oil, and salt. Gradually add water, a teaspoon at a time, until you get a smooth, thick dough. Turn it out onto your work surface and knead it for about 10 minutes until it feels really smooth and elastic. Cover the dough and let it rest for 5 to 10 minutes.
Step 2
Divide the dough into 8 equal pieces and roll each one out into a thin sheet about 18 inches long, using a rolling pin or pasta roller. Sprinkle flower petals, thyme, and dill over half of the sheet lengthwise. Fold the dough over the herbs, then roll it out again into a thin sheet. Use a pizza cutter to slice the dough into long strips about an inch wide.
Step 3
Bring a large pot of salted water to a boil. Drop in the pasta and cook for 3 to 4 minutes until tender but still firm. Drain the pasta and toss it with Parmesan, butter, lemon zest, and a squeeze of lemon juice. Season with salt and pepper to taste, then serve.
