Directions
Gently heat your oven to 350Β°F (175Β°C). Toss the yams on a baking sheet and pop them in the oven. Let them bake until they're really softβthis usually takes about an hour. Once they're cool enough to handle, peel off the skins and put the yams into a big mixing bowl. Mash the chipotle chiles into a smooth paste, then add it to the yams along with the butter, brown sugar, and heavy cream. Keep mashing everything together until itβs nice and smooth. Give it a taste and add salt and pepper as you like. Spread the mashed mixture into a shallow baking dish, then return it to the oven just long enough to heat through, about 20 to 25 minutes.
