Once done, let the chicken cool enough to handle, then slice it into strips and pop them into a large bowl.

Mix the pineapple juice, bourbon, soy sauce, garlic, brown sugar, and black pepper in a saucepan over medium-low heat. Stir everything until the sugar dissolves, then let it simmer gently for 15 to 20 minutes until the sauce thickens up nicely. While thatβs going, melt some butter in a small pan over medium-high heat and sautΓ© the mushrooms until theyβre soft and golden, about 3 to 5 minutes.
