Step 1
Beat together the molasses, brown sugar, and butter in a bowl until everything is nice and smooth. Then, add the flour, eggs, cinnamon, baking soda, ginger, and salt to the molasses mixture, stirring until just combined. Cover the bowl with plastic wrap and pop it in the fridge for about an hour to let the dough firm up.
Step 2
When you’re ready to bake, preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly flour a clean surface covered with a cloth to keep the dough from sticking. Roll out the dough to about a quarter-inch thick and cut out your cookies using cookie cutters, or just slice them into shapes you like. Place the cookies about an inch apart on the baking sheet.
Step 3
Bake the cookies for around 8 minutes, or until they feel firm when you gently press them. Let them cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Enjoy!
