What Makes This Recipe Unique

These cookies bring a perfect balance of warm spices and rich molasses, making them a cozy treat for chilly holiday days. They have a chewy texture with just the right amount of sweetness, which makes them a favorite for sharing with family and friends.

Better Cooking Tips

- Use fresh ginger for the best flavor and a little extra zing.
- Chill the dough before baking to prevent the cookies from spreading too much.
- Don’t overbake; remove the cookies when the edges are set but the centers are still soft for a chewy texture.

Step 1

Beat together the molasses, brown sugar, and butter in a bowl until everything is nice and smooth. Then, add the flour, eggs, cinnamon, baking soda, ginger, and salt to the molasses mixture, stirring until just combined. Cover the bowl with plastic wrap and pop it in the fridge for about an hour to let the dough firm up.

Step 2

When you’re ready to bake, preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly flour a clean surface covered with a cloth to keep the dough from sticking. Roll out the dough to about a quarter-inch thick and cut out your cookies using cookie cutters, or just slice them into shapes you like. Place the cookies about an inch apart on the baking sheet.

Step 3

Bake the cookies for around 8 minutes, or until they feel firm when you gently press them. Let them cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Enjoy!

Serving Advice

Serve these cookies with a hot cup of tea, coffee, or even a glass of cold milk. They also pair wonderfully with a dollop of whipped cream or a scoop of vanilla ice cream for a festive dessert.

Keeping Leftovers Fresh

Store the cookies in an airtight container at room temperature to keep them soft and chewy. They can also be frozen for up to three months; just thaw them at room temperature before serving.
