Gently heat your oven to 350°F (175°C). Line a pie pan with foil and place the salmon fillets inside, seasoning them lightly with some pepper. In a small bowl, mix together the brown sugar, miso, and grated ginger. Gradually add soy sauce until the mixture becomes a thick, shiny glaze. Spoon a generous layer of this glaze over the salmon. Pop it in the oven and bake for about 10 minutes. While that’s cooking, move your oven rack closer to the top, around 6 inches from the heat, and get the broiler going. Finish the salmon under the broiler for 2 to 3 minutes, keeping a close eye on it until the glaze bubbles and turns golden, and the fish flakes easily with a fork.
