Step 1
Stir the butter, honey, and brown sugar in a bowl until it’s smooth. Then, stir in the egg yolk. In another bowl, whisk together the flour, baking soda, gingerbread spice, and salt. Add the dry ingredients to the butter mixture and knead everything together for about a minute. Wrap the dough in plastic wrap and pop it in the fridge for an hour to chill.
Step 2
When you’re ready, preheat your oven to 320°F. Roll out the dough on a piece of parchment paper until it’s about 1/6-inch thick. Use a small gingerbread man cutter—or a glass if you don’t have one—to cut out shapes. Place them on a baking sheet lined with parchment.
Step 3
Bake the cookies in the center of the oven for 8 to 9 minutes, or until they’re just starting to turn golden. Let them cool on a rack for about 15 minutes. Once cool, spread a little Nutella on the back of one cookie and sandwich it with another. Keep going until all your cookies are filled.
Step 4
Finally, mix some confectioners’ sugar with lemon juice, adding the juice slowly until you get a smooth icing. Spoon it into a piping bag and decorate your cookies however you like!
