Step 1
In a bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt. Add the brown sugar and break it up so there arenβt any big clumps. In another bowl, beat the eggs, then stir in the milk, applesauce, and vanilla extract. Make a little well in the dry ingredients and pour in the wet mixture. Gently stir everything until just combinedβif the batter feels too thick, add a splash more milk to loosen it up.
Step 2
Heat a skillet or griddle over medium-high heat and lightly grease it with vegetable oil. Drop about 2 tablespoons of batter onto the hot surface for each pancake. Cook until you see bubbles forming on top and the edges start to look set, about 2 to 3 minutes. Flip them over and cook for another 2 to 3 minutes until golden brown. Keep going until youβve used all the batter, adding more oil if needed.
