In a bowl, whisk together the flour, sugar, baking powder, and salt. Then add the oil and eggs, pouring in the milk little by little until the batter reaches a smooth, pourable consistencyβitβs okay if itβs a bit lumpy. Heat a lightly greased griddle or non-stick pan over medium-high heat. Once hot, spoon generous dollops of batter onto the griddle. Cook until you see bubbles forming on the surface and the edges start to look set, about 3 to 4 minutes. Flip the pancakes carefully and cook for another 2 to 3 minutes until golden brown. Keep going until youβve used up all the batter, adding a bit more oil if needed to keep the pancakes from sticking. Serve warm and enjoy!
