Heat your oven to 350Β°F (175Β°C) and lightly grease a 9x13-inch baking pan. In a big bowl, combine oats, almond flour, dried fruit, rice cereal, brown sugar, pecans, chocolate chips, flax seeds, instant coffee granules, and cinnamon. In a separate smaller bowl, whisk together the applesauce, honey, egg, and vanilla extract until smooth. Pour the wet ingredients into the dry and mix everything until it's well combined. Press the mixture evenly into the prepared pan, making sure itβs packed down nicely. Pop it in the oven and bake for about 25 to 30 minutes, or until the edges turn a nice golden brown. Let it cool completely before slicing into bars so they hold together well.
