Directions
Lightly heat your oven to 350°F (175°C) and lining a 9x13-inch baking dish with parchment paper. In a large bowl, combine the oats, walnuts, brown sugar, dried fruit, both flours, wheat germ, cinnamon, and a pinch of salt. In another bowl, whisk together the oil, honey, egg, and vanilla until smooth. Pour the wet ingredients into the dry and stir everything just until it’s mixed—not overdoing it. Press the mixture evenly into the prepared pan. Pop it in the oven and bake for about 20 to 25 minutes, until the edges turn a nice golden brown. Let it cool on a wire rack for a bit, then slice into 12 bars while still warm using a pizza cutter.
