Directions
Lightly heat your oven to 350°F (175°C) and lining a baking sheet with parchment paper. In a big bowl, toss together the oats, coconut oil, hazelnuts, cocoa nibs, maple syrup, ground coffee, brown sugar, cocoa powder, instant coffee granules, coffee extract, salt, cinnamon, black pepper, and vanilla extract until everything is well coated. Spread the mixture evenly on the baking sheet and smooth it out with a spatula. Pop it in the oven and bake for about 10 minutes, then give it a good stir. Put it back in for another 10 minutes or so until it’s starting to turn golden and crisp. Let the granola cool completely, then mix in the chocolate chips. Store it in an airtight container and enjoy whenever you want a mocha-flavored treat!
