- Seal the edges of the wontons well to prevent the filling from leaking during frying.
- Use a slotted spoon to remove the wontons from the oil and drain them on paper towels to keep them crisp.
Step 1
Place the chicken breasts in a pot and covering them with about an inch of water. Bring the water to a boil, then lower the heat and let it simmer, covered, until the chicken is cooked through and no longer pink inside—this usually takes around 10 to 14 minutes. If you have a thermometer, the internal temperature should reach 165°F. Once done, drain the chicken and let it cool for 5 to 10 minutes until you can handle it easily. Cut the chicken into small cubes.
Step 2
Pop the chicken cubes into a blender and pulse until the mixture is soft enough to scoop with a spoon. Lay out your wonton wrappers on a clean surface, and spread about a teaspoon of tzatziki sauce in the center of each one. Add a teaspoon of the chicken mixture and a teaspoon of crumbled feta cheese on top. Fold the wrappers over to form little pockets and press the edges to seal them well.
Step 3
In a small bowl, whisk together the egg and a splash of water, then brush this over the tops of the wontons to help them get a nice golden color when frying. Heat oil in a deep fryer or a large pan to 350°F. Fry the wontons in batches for about 2 minutes each, or until they turn golden brown and crispy. Once cooked, drain them on paper towels before serving.
