Step 1
Cook the ground beef and garlic in a large non-stick pot over medium-high heat. Keep stirring it until the beef is fully browned and no longer pink, which should take about 10 minutes. Next, toss in the bell pepper, red onion, carrot, zucchini, and celery. Cook everything together, stirring now and then, until the veggies have softened up, around 5 minutes.

Sprinkle in the cumin, chili powder, oregano, coriander, and black pepper, and cook for another minute to let the spices get fragrant. Then add the tomatoes, corn, tomato soup, mushrooms, barbecue sauce, and taco seasoning. Give it all a good stir and bring the mixture to a boil. Once itโs boiling, lower the heat to a gentle simmer, cover the pot, and let it cook for about 20 minutes, stirring occasionally.

After that, stir in all the beansโthe black beans, garbanzo beans, kidney beans, and baked beansโand let the chili simmer until everything is heated through, about 15 minutes. Finally, take it off the heat and stir in some fresh cilantro and a squeeze of lime juice to brighten it all up. Enjoy!
