Step 1
Heat a tablespoon of olive oil in a large skillet over medium heat. Toss in the chopped onion and cook, stirring occasionally, until it softensโabout 5 minutes. Next, add the bacon pieces and a bit of brown sugar, cooking until the bacon gets nice and crispy. Once done, take the mixture off the heat.

Now, spread about a quarter cup of barbecue sauce on one tortilla. Sprinkle on a quarter of the bacon and onion mix, some fresh cilantro, and half a cup of shredded Cheddar cheese. Top it all with another tortilla.

Heat a teaspoon of olive oil in the skillet over medium heat again. Carefully place the quesadilla in the pan and cook until the bottom is golden and crispy, around 3 minutes. Flip it over and cook for another couple of minutes until the cheese inside is melted and gooey. Transfer it to a plate lined with paper towels to absorb any extra oil.

Once itโs cool enough to handle, slice the quesadilla into quarters. Repeat the whole process with the remaining tortillas and filling. Enjoy!
