Step 1
Lightly heat your oven to 400Β°F (200Β°C) and getting your grill nice and hot, around medium-high. Give the grill grate a light brush of oil so nothing sticks. In a small bowl, mix together the cinnamon, black pepper, garlic powder, chili powder, cayenne, and brown sugar. Rub this spice blend all over the flat iron steaks, making sure to press it in well.

Heat some olive oil in a skillet over medium heat. Add the garlic and onion, cooking and stirring until the onions are soft and translucentβthis usually takes about 5 minutes. Pour in the red wine and let it simmer until most of the liquid has cooked off, about another 5 minutes. Take the onions off the heat and set them aside for now.

Place the seasoned steaks on the hot grill and cook them for about 4 minutes on each side. Once theyβre nicely grilled, transfer them back to the skillet. Pile the onion mixture on top of each steak and sprinkle generously with Gorgonzola cheese.

Pop the skillet into the oven and bake just until the cheese melts and the steaks reach your preferred donenessβusually around 5 minutes for medium. Finish by sprinkling some chopped fresh basil over everything before serving.
