Step 1
Stir together the rum, soy sauce, lime juice, brown sugar, garlic, ginger, thyme, salt, pepper, hot pepper sauce, and serrano pepper in a bowl. Use a fork to poke the chicken all over—this helps the marinade soak in. Put the chicken in a shallow dish, pour the marinade over it, and cover. Let it sit in the fridge for at least 8 hours, or overnight if you can.
Step 2
When you're ready to cook, heat up the grill to high and give the grate a light coating of oil so the chicken doesn’t stick. Throw away the leftover marinade, then place the chicken on the grill. Cook it for about 8 minutes on each side, or until the juices run clear and the chicken is cooked through.
