In a large bowl, whisk together the beer, chopped onion, brown sugar, olive oil, red wine vinegar, minced garlic, and hot sauce. Add the skirt steak and give it a good toss so itโs well coated with the marinade. Cover the bowl with plastic wrap and pop it in the fridge for at least 6 hours, or up to overnight if you have the time.

When youโre ready to cook, fire up your grill to high heat and give the grates a light oiling to prevent sticking. Take the steak out of the marinade and let any extra drip offโdiscard the marinade after.

Place the steak on the hot grill and cook it for about 4 to 5 minutes on each side. Youโre aiming for a nice pink center, so if you have a meat thermometer, look for around 130ยฐF. Once cooked, transfer the steak to a plate and let it rest for about 10 minutes before slicing. This helps keep it juicy and flavorful.
