Why This Recipe Stands Out
Cooking Pointers
- Preheat the grill to medium-high to get nice grill marks without drying out the meat.
- Use a meat thermometer to ensure the turkey reaches an internal temperature of 165ยฐF for safe and juicy results.
Step 1
Grind the ancho and pasilla chiles along with cumin, onion, salt, and pepper into a fine powder using a spice or coffee grinder. Transfer this spice mix to a bowl, then stir in the brown sugar until everything is well combined.
Step 2
Squeeze fresh lime juice over the turkey breast, then rub it all over with the spice blend. Let it sit and soak up the flavors for about an hour.
Step 3
When you're ready to cook, heat up your grill to high and brush the grate lightly with oil to prevent sticking. Once hot, turn the heat down to medium. Take the turkey out of the marinade, saving any leftover marinade for basting later.
Step 4
Place the turkey on the grill and sear it for 3 to 4 minutes on each side to get a nice crust. After that, turn off half of the burners and move the turkey to the cooler part of the grill. Close the lid and roast it for about 15 to 20 minutes.
Step 5
Flip the turkey over, give it a good baste with the reserved marinade, then keep cooking until the internal temperature hits 165ยฐF (74ยฐC). This should take another 15 to 20 minutes. Once done, let the turkey rest for 5 minutes before slicing and serving.
