Cut the avocados in half and scooping all the creamy flesh into a big bowl. Grab a spoon or a masher and mash everything up until itβs mostly smooth with just a few small chunks left. Squeeze fresh lime juice over the mashed avocado to keep it bright and fresh. Chop up some cilantro and add it to the bowl along with one chipotle pepper and a bit of the smoky adobo sauce from the can. Give everything a good stir, then season with salt and pepper to taste. Next, mix in some finely chopped red onion and jalapeΓ±os for a little extra kick. Finally, fold in diced tomato gently so it doesnβt get mushy. Pop the guacamole in the fridge for a bit before serving, and top it off with the remaining chipotle pepper and a drizzle of adobo sauce for an extra punch.
