Heat your oven to 350°F (175°C) and placing a rack in the lower third. Lightly spray a mini muffin pan with cooking spray to keep the muffins from sticking.

In a small bowl, mix the water and flaxseed meal and let it sit for about 5 minutes until it thickens. While that’s resting, whisk together the flour, oats, brown sugar, and salt in a separate bowl.

Once the flaxseed mixture is ready, combine it with the mashed bananas, honey, yogurt, egg, applesauce, coconut oil, and vanilla extract in a larger bowl. Give everything a good stir, then add the dry ingredients and fold them in gently. Finally, toss in the chocolate chips and walnuts.
