Preheat your air fryer to 325°F (165°C). While it’s warming up, line the basket with parchment paper and give it a quick spray with nonstick cooking spray to keep things from sticking. In a bowl, combine the almond flour, Greek yogurt, 2 tablespoons of sweetener, baking powder, cinnamon, vanilla, and a pinch of salt. Mix everything together until it forms a dough—you can use your hands to bring it all together.

Lightly flour your work surface, then divide the dough into four equal parts and roll each into a ball. Using a bench scraper or a knife, cut each ball into eight pieces. Dust those pieces with a bit of flour, then roll each one between your hands into thin ropes. The thinner the ropes, the crispier your funnel cakes will turn out.

Arrange the ropes in a circular pattern in the air fryer basket to form a funnel cake shape. Spray each one lightly with cooking spray. Air fry them for about 5 to 6 minutes until they’re golden brown. Carefully flip each funnel cake, spray again, and air fry for another 3 to 4 minutes.
