Gently heat your oven to 375Β°F (190Β°C) and grease a 12-cup muffin tin. In a big bowl, combine the almond milk, applesauce, chopped apple, raisins, pecans, flax meal, eggs, brown sugar, cinnamon, and nutmeg. Give everything a good stir, then mix in the oats until itβs all well combined. Let the mixture sit for about 5 minutes so the oats can soak up the liquid. Use an ice cream scoop or spoon to fill each muffin cup evenly. Pop them in the oven and bake for around 20 minutes, until theyβre lightly golden on top. Once done, let the muffins rest in the tin for a few minutes before moving them to a wire rack to cool completely.
