Step 1
Heat your oven to 425Β°F (220Β°C) and line a baking sheet with foil, then give it a quick spray with cooking spray. In a bowl, toss together the kohlrabi, chopped onion, paprika, and garlic powder. Drizzle in a tablespoon of olive oil and mix everything until itβs well coated. In another bowl, put the okra and drizzle with the remaining olive oil. Sprinkle in the cornmeal, salt, and pepper, then stir everything so the okra is nicely coated.

Spread the okra on one side of the baking sheet and the kohlrabi mixture on the other. Pop it in the oven for about 25 minutes. After that, give both sides a good stirβkeeping them separateβand then bake for another 20 to 25 minutes, until the okra is crispy and the kohlrabi is golden and tender.
Step 3
Once everything is cooked, take the tray out and gently mix the okra and kohlrabi together. Finish by stirring in some sunflower seeds for a nice crunch. Serve warm and enjoy!
