Step 1
Combin the applesauce, brown sugar, tomato sauce, vinegar, salt, garlic powder, cinnamon, liquid smoke, chili powder, paprika, black pepper, cayenne, and cloves in a large pot. Bring everything to a boil, then lower the heat and let it simmer gently for about an hour and a half to two hours, stirring occasionally, until the sauce thickens up nicely.
Step 2
While the sauce is cooking, sterilize your jars and lids by boiling them in water for at least five minutes. When the sauce is ready, carefully ladle it into the hot jars, leaving about a quarter-inch of space at the top. Use a thin spatula or knife to run around the inside edges of the jars to get rid of any air bubbles. Wipe the rims clean with a damp paper towel, then put on the lids and screw the rings on until they're fingertip tight.
Step 3
Place a rack at the bottom of a big pot and fill it halfway with water. Bring the water to a boil, then lower the jars in using jar tongs or a holder, making sure to leave some space between each one. Add more boiling water if needed so it sits at least an inch above the tops of the jars. Cover the pot and let the jars process in the boiling water for 20 minutes.
Step 4
Once the time is up, carefully remove the jars and set them on a towel or wooden surface, spacing them out so they can cool. After they’ve cooled, press down on the center of each lid to check the seal—it shouldn’t move up or down at all. Store your jars somewhere cool and dark, and enjoy your homemade sauce!
