Gently heat your oven to 325Β°F (165Β°C) and lightly grease a large baking sheet. In a big bowl, toss together the oats, almonds, cinnamon, cocoa powder, salt, brown sugar, and dried fruitβadding each ingredient one at a time and mixing well before moving on. In a small bowl, whisk the maple syrup and vanilla extract, then pour this over the dry ingredients. Use a rubber spatula to gently fold everything until the oats and nuts are nicely coated. Spread the mixture evenly on your baking sheet and bake for about 20 minutes. Give it a good stir, then pop it back in the oven for another 25 minutes or so, until it turns a lovely golden brown. Let it cool for around 20 minutes, then fold in the chocolate chips so they start to melt and coat the granola a bit. Once itβs completely cool, itβs ready to store and enjoy!
