Step 1
In a large bowl, combine the ground beef, ground pork, bread crumbs, beef broth, brown sugar, onion powder, salt, pepper, coriander, nutmeg, and allspice. Mix everything together until well combined. Take a small handful of the mixture and form it into two or three small patties to cook right away, and pop the rest into the fridge for later.
Step 2
Heat a bit of oil in a large skillet over medium-low heat. Cook the patties for about 3 to 5 minutes on each side until they’re nicely browned and cooked through. Be careful not to overcook them, or they’ll end up dry. If you have a meat thermometer, the center should reach 160°F (70°C).
Step 3
Give the cooked patties a taste, and if you think the seasoning needs a little boost, go ahead and add more salt, pepper, or spices to the raw mixture. Once you’re happy with the flavor, press the uncooked sausage mixture firmly into loaf pans and chill them in the fridge for a couple of hours until they’re firm.
Step 4
When the sausage loaves are set, take them out of the pans and slice into half-inch thick slabs. You can separate the slices with plastic wrap and keep them in the fridge if you plan to use them within a few days.
Step 5
To cook the slices, just heat them over medium-low heat in a skillet until they’re browned and heated through, just like you did with the small patties.
