While the carrots cool, preheat your oven to 400Β°F (200Β°C). In a big bowl, beat the eggs, then add the carrot puree, evaporated milk, brown sugar, honey, salt, and spices like cinnamon, nutmeg, cloves, and allspice. Mix everything together until itβs nice and smooth.

Fit your pie crust into a 9-inch pie dish and pour the carrot filling in. Bake in the oven for about 40 to 45 minutes, or until a knife inserted into the center comes out clean. Let it cool a bit before serving.
