Step 1
In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, brown sugar, Sriracha, rice vinegar, sesame oil, garlic powder, and pepper. Take half of this mixture and toss it with the pork, then pop it in the fridge to marinate for at least 4 hours or overnight if you have the time. Keep the rest of the sauce aside for later.

Bring a large pot of salted water to a boil. Cook the udon noodles for about 2 minutes, then add the broccoli and let it cook just until itβs a little tender and the noodles have loosened up, about another minute. Drain everything and set it aside.

Heat some olive oil in a wok or a deep pan over medium heat. Add the chopped onion and garlic, stirring until they soften and become translucent, which should take around 5 minutes. Then, add the marinated pork, bean sprouts, and shredded carrot. Stir-fry everything until the pork is cooked through and no longer pink, about 5 minutes.
Step 4
Now, toss in the drained udon noodles and broccoli, pour in the remaining sauce, and stir everything together so the noodles soak up all the flavors. Let it cook for 2 to 3 minutes, just until everything is heated through. Finally, sprinkle the chopped green onions on top, give it one last gentle toss, and youβre ready to serve.
