Step 1
Pat the wings dry, then toss them in a bowl with Cajun seasoning until they’re nicely coated. Place a trivet inside your Instant Pot (or any pressure cooker you have) and arrange the wings on top. Pour half a cup of cold water around the wings in the pot.
Step 2
Lock the lid in place and set the pressure cooker to high pressure for 5 minutes. It will take about 10 to 15 minutes to build up pressure before the timer starts counting down. While that’s happening, preheat your oven’s broiler to high and move the rack just above the middle. Line a baking sheet with foil and set a cooling rack on top, then give the rack a quick spray with nonstick spray.
Step 3
When the wings are done, let the pressure release naturally for 10 minutes, then carefully switch to venting to release any leftover steam. Remove the lid and mix together hot sauce, barbecue sauce, and melted butter in a bowl. Toss half of the sauce with the wings until they’re all coated, then spread them out on the cooling rack.
Step 4
Pop the wings under the broiler and cook for about 5 to 10 minutes on each side, until they’re as crispy as you like. You might want to rotate the pan halfway through for even cooking. Once they’re done, toss the wings in the remaining sauce, give them a good coating, and serve right away.
