Step 1
Gently heat some oil in a tagine or Dutch oven over medium heat. Toss in the onions and garlic, stirring occasionally, and cook until theyβre soft and fragrantβthis usually takes about 5 to 10 minutes. Next, sprinkle in the turmeric, cumin, agave nectar, cinnamon, cayenne, and black pepper. Stir everything well so the spices coat the onions evenly.
Step 2
Pour in just enough water to cover the bottom of the pot, then add the carrots along with a pinch of salt. Let this simmer gently over medium-low heat for around 12 minutes. After that, stir in the chickpeas. If it looks a bit dry, add a splash more water, but keep the sauce nice and thick. Let it all cook together for another 7 minutes.

When itβs ready, serve it up with some fresh lemon wedges and a handful of chopped cilantro for a bright, fresh finish.
