Cut the papaya in half lengthwise and scooping out all the seeds and pulp. Then, scoop the flesh into a blender or food processor. Add the heavy whipping cream, brown sugar, and a sprinkle of chili-lime seasoning. Blend everything together until it’s smooth, about half a minute. Pour the mixture into an airtight container and pop it in the fridge for at least 8 hours, or overnight if you have the time. When you’re ready, pour the chilled mixture into your ice cream maker and let it churn according to the machine’s instructions—usually around 20 minutes. In the last few minutes, toss in some chopped strawberries so they get mixed in nicely.
