Ad the butternut squash, water, turmeric, and ginger to your Instant Pot or any pressure cooker you have. Seal the lid and set it to cook on high pressure for about 8 minutes. It might take around 10 to 15 minutes for the pressure to build up before the timer starts. Once the cooking time is up, carefully release the pressure using the quick-release method. When it's safe to open, take off the lid and pour in the coconut milk. Blend everything right in the pot with an immersion blender until the soup is nice and smooth. Turn on the sautรฉ function and slowly stir in the chicken stock until you get the consistency you like. Finally, season with salt and pepper to taste, and youโre ready to serve!
