Step 1
Turn on your Instant Pot and setting it to the sauté function. Toss in the butter and bacon, cooking until the bacon is just about done but still a bit chewy, which should take around 5 minutes. Next, add the pork chops to the pot and sear them for about a minute on each side to get a nice golden color. Pour in the honey, soy sauce, and garlic, stirring everything together gently.

Lock the lid in place and set the pot to cook on high pressure for 10 minutes. It will take about 10 to 15 minutes for the pressure to build up. Once the cooking time is up, carefully release the pressure using the quick-release method, then open the lid.

Take the pork chops out and set them aside on a plate. Switch the pot back to sauté mode. In a small bowl, mix the cold water and cornstarch until smooth, then stir this mixture into the sauce in the pot. Let it cook and thicken for about 5 minutes, stirring occasionally. Finally, pour the thickened sauce over the pork chops and serve.
