Giv the black-eyed peas a good rinse, then season them with some salt and pepper. Toss everything into the bottom of your Instant Pot, along with the chicken broth, diced tomatoes, chopped ham, red onion, and garlic. Close the lid and make sure it’s sealed. Set your Instant Pot to the Bean setting on high pressure and cook for about 30 minutes. It’ll take around 10 to 15 minutes for the pressure to come up. When the cooking time is up, let the pressure release naturally—that can take anywhere from 10 to 40 minutes. Once the pressure has fully released, open the lid and give everything a good stir before serving.
