Directions
Turn on your Instant Pot and setting it to the sautรฉ mode. Pour in a bit of oil, then add the frozen vegetable mix and garlic. Cook, stirring occasionally, until everything softens up nicely, about 5 minutes. Next, toss in the beans along with the water and bay leaves. Switch off the sautรฉ function, then close and lock the lid. Set the pressure cooker to high pressure and cook for 40 minutes. Itโll take about 10 to 15 minutes for the pressure to build up. When the cooking time is up, let the pressure release naturally for at least 20 minutes before opening the lid. Finally, stir in some liquid smoke, salt, and pepper to taste. Give the beans a good mix and mash them a bit if you like before serving.
