Step 1
Greas two baking sheets so nothing sticks. In a saucepan over medium heat, melt the margarine, then stir in the brown sugar and salt until itโs well combined. Add the corn syrup and sweetened condensed milk, and cook the mixture, stirring now and then, until it reaches about 250ยฐF (120ยฐC), which should take around 15 to 20 minutes. Once itโs done, take it off the heat and fold in the pecans along with the vanilla extract.

Spoon the caramel mixture onto the prepared baking sheets in small mounds and let them cool until theyโre firm. While the caramels are setting, melt the chocolate chips in a saucepan over medium-low heat, stirring frequently until smooth and glossyโthis usually takes about 5 minutes.

Once the caramels have cooled, dip each one into the melted chocolate, then place them back on the greased baking sheet. Let everything cool until the chocolate is fully set before serving.
