Step 1
Heat your oven to 350ยฐF (175ยฐC) and lightly grease a 9x5-inch loaf pan. In a skillet, warm a tablespoon of oil over medium heat, then add the mushrooms, bell pepper, and onion. Cook them, stirring occasionally, until they softenโabout 3 to 4 minutes. Toss in the garlic and cook for just 30 seconds until it smells amazing. Take the pan off the heat and let those veggies cool down.

While the veggies are cooling, combine the bread crumbs, parsley, egg, and Italian seasoning in a big bowl. Once the veggie mixture has cooled, add it to the bowl and mix everything together. Then gently fold in the ground pork and beef until well combined. Transfer the mixture to your loaf pan and shape it into a loaf.

In a separate small bowl, whisk together the tomato sauce, Dijon mustard, brown sugar, and vinegar to make the glaze. Pop the meatloaf into the oven and bake for 45 minutes. After that, pull it out and brush the glaze all over the top. Put it back in the oven and keep brushing on more glaze every 10 to 15 minutes as it bakes for about 30 more minutes. Youโll know itโs done when the center isnโt pink anymore and a meat thermometer reads 160ยฐF (70ยฐC). When itโs ready, take it out and drain off any extra oil before slicing and serving.
