Next, take each chicken breast and carefully cut a deep pocket into the sideβjust enough to hold the filling without cutting all the way through. Stuff each pocket with the cheese and jalapeno mixture. Then, wrap each chicken breast with three slices of bacon, making sure itβs snug.
