Step 1
Gently heat a large skillet over medium-high heat. Toss in the bison and pork and cook, stirring occasionally, until the meat is nicely browned and crumblyโthis usually takes around 5 to 7 minutes. Add the chopped onion and garlic, cooking them until they soften, about 3 minutes. Then, stir in the tomato sauce, tomato paste, salsa, water, peri-peri sauce, and Italian seasoning. Turn the heat down to low and let the sauce simmer gently, stirring now and then, for about an hour until it thickens and the flavors really come together.

While the sauce is simmering, preheat your oven to 375ยฐF (190ยฐC). Take the frozen spinach and microwave it in a safe bowl until itโs steaming and any excess water has evaporatedโthis usually takes 5 to 7 minutes. Let it cool a bit, then mix in the cottage cheese.
Step 3
Now itโs time to assemble. Spread a thin layer of that rich meat sauce on the bottom of a 9x13-inch baking dish. Layer some noodles over the sauce, then add another layer of meat sauce, followed by another layer of noodles. Spread all the spinach and cottage cheese mixture on top, then add one more noodle layer, the rest of the meat sauce, and finally sprinkle on the shredded Italian cheese blend. Cover everything with foil.
Step 4
Pop the dish into the oven and bake for 40 minutes. After that, remove the foil and bake for another 15 minutes or so until the cheese is golden and bubbly. Once itโs out of the oven, let it sit for about 20 minutes before slicingโthis helps it set and makes serving easier. Enjoy!
