Cooking Tips
- Let the patties rest for a few minutes after cooking to keep them moist.
- Avoid pressing down on the patties while cooking to retain their juices.
Step 1
Warm a little oil in a small skillet over medium heat. Toss in the red onion, garlic, and ginger, and cook until the onion softens and turns translucent—this usually takes about 5 minutes. Once done, set it aside to cool.

While that’s cooling, get your grill going on medium-high heat and give the grate a light oiling to prevent sticking.

In a big bowl, mix together the ground chicken, panko, teriyaki sauce, salt, and pepper. Add the cooled onion mixture and gently combine everything with your hands until well mixed. Shape the mixture into four burger patties.
Step 4
Place the burgers on the grill and cook them for about 5 to 6 minutes on each side until they’re cooked through. Towards the end, lay slices of provolone on top so they melt nicely. (If you have a thermometer, the burgers should hit 165°F inside.)
Step 5
While the burgers are grilling, throw the pineapple slices on the grill too and cook them for about a minute per side until they’re warmed through.
Step 6
Finally, spread a little mayo on your hamburger buns. Assemble the burgers with the melted cheese, grilled pineapple, and some jalapeño peppers for a bit of a kick. Enjoy!
