Step 1
Lightly heat your grill to medium-high and give the grates a quick brush with oil so the burgers donโt stick. While the grillโs warming up, cook the bacon in a skillet over medium-high heat, turning it now and then until itโs nice and crispyโthis usually takes about 10 minutes. Once itโs done, drain the bacon on some paper towels and save a little bit of that bacon grease for later.
Step 2
In a bowl, mix together the bison, bread crumbs, egg, Worcestershire sauce, salt, and pepper until everything is combined and the mixture feels a bit stickyโthis helps the patties hold together. Divide the mixture into four patties, then brush each side lightly with the reserved bacon grease. This not only adds flavor but also helps prevent sticking on the grill.
Step 3
Place the patties on the hot grill and cook for about 5 minutes per side, until theyโre nicely browned and reach an internal temperature of 160ยฐF. Once theyโre almost done, lay a slice of cheddar on each patty and let it melt for a minute or so.

While the cheese is melting, put your buns on the grill cut-side down for about a minute until theyโre lightly toasted. Spread some mayonnaise on the buns, then assemble your burgers by adding the cheesy patties and crispy bacon. Enjoy!
