Heat some olive oil in a pot over medium heat. Add the red onion and let it cook, stirring occasionally, until it’s nicely browned and soft, about 7 to 10 minutes. Next, pour in the lentils and add enough water to cover them by a couple of inches. Bring everything to a boil, then lower the heat to medium-low.

Stir in the tomato paste, garlic, brown sugar, and paprika, mixing well so the tomato paste dissolves into the liquid. Let it simmer gently for about an hour, until the lentils are soft and cooked through. Once the lentils are tender, toss in the kale, turn the heat down to low, and cook just until the kale wilts and becomes tender, around 10 to 15 minutes. Finish by seasoning with salt and freshly ground black pepper to taste, and you’re ready to dig in.
