Step 1
In a shallow bowl, mix together the seasoned bread crumbs, grated Parmesan, and garlic salt. In another bowl, beat the eggs until smooth. Heat the olive oil in a large skillet over medium heatβitβs ready when you see it shimmering but not smoking.

Take each zucchini slice and dip it first into the beaten eggs, then coat it well with the bread crumb mixture. Place the slices in the hot oil in a single layer and cook for about 3 minutes, until they turn golden brown. Flip them over and cook a few minutes more until theyβre cooked through and nicely browned on both sides.
Step 3
Once the zucchini is almost done, sprinkle the mozzarella cheese on top and let it melt for a minute or two. When everythingβs hot and bubbly, spoon some warm spaghetti sauce onto your plate and pile on the cheesy fried zucchini. Serve right away and enjoy!
