Step 1
Gently heat your oven to 375°F (190°C) and lining two baking sheets with parchment paper. In a bowl, mix together the flour, graham cracker crumbs, baking soda, baking powder, and a pinch of cinnamon. In a separate bowl, beat the butter and half a cup of sugar until creamy. Then add the egg yolk and vanilla, mixing until everything’s combined. Gradually add the dry ingredients and keep mixing until the dough comes together—it should take about a minute or two.
Step 2
Roll the dough into 1-inch balls and coat them in the remaining sugar. Place them on your prepared baking sheets and pop them in the oven. Bake until the bottoms are just starting to brown, about 6 to 7 minutes. Let the cookies cool on the sheets for a few minutes before transferring them to a wire rack to cool completely.
Step 3
While the cookies cool, zest all three limes and set the zest aside. Juice two of the limes. Then, beat the cream cheese until smooth, add the powdered sugar, lime juice, and zest, and mix everything until it’s well combined.
Step 4
Finally, spread the lime filling on the flat side of half the cookies, then sandwich them with the remaining cookies. Enjoy!
