In a big bowl, toss together the chicken chunks, ginger-garlic paste, chili powder, crushed coriander seeds, chili flakes, cumin powder, dried fenugreek, lemon juice, cornflour, rice flour, egg white, chopped green chilies, coriander, mint, onion, and a pinch of salt. Give it a good mix until everything is well combined.
